Domaine VIOLOT-GUILLEMARD is owned and run by the stocky and super-knowledgeable 53 year old Thierry Violot and his attractive wife Estelle who operates their busy Chambre-d’Hôte.

Thierry inherited small parcels of wonderful vineyards planted since 1936. Bottling just 2200 cases each vintage, this quality artisan producer owns a total of five hectares across nine different vineyards which he farms biologically.

All fruit is hand picked and de-stemmed, then pressed in a pneumatic press prior to a four day cold maceration in open wood fermenters. All ferments begin naturally and continue for about 15 days at up to 33 degrees during which time pigeage takes place. The wine is settled before being racked to 225 litre low toast barrels (all staves are seasoned for three years) the new population is maintained at 20 per cent. Transfer of grapes and juice is done by gravity. The wines are racked once - just before the bottling takes place and are neither fined nor filtered. The Violot-Guillemard wines completely defy the old notion that Pommard is hard and needs ten years to soften.

2007 Bourgogne Rouge ‘Les Maison Dieu’
Also labelled as Pinot Noirien which is an ancient eastern French name for Pinot Noir. Essentially this is Pommard Villages level fruit and is produced in a new 10 hectolitre tronconic wooden fermentation vat. It is a lovely cherry pith and strawberry fruited Pinot Noir with good complexity at this level and is super-fine now but tends to put on some nice weight given nine to twelve months in the cellar.

2006 Pommard *sold out*
Some smoky oak notes and wild berry in cherry spectrum, very pretty wine with its violet notes. The palate is elegant and finessed with a profile of violet and cherry which builds to the fine tannin finish.

2006 Pommard 1er Cru 'La Platiere' *sold out*
Planted in 1936; showing plenty of lovely oak at the moment with loads of ripe violet and cherry, this is marvelously complex, ripe and interesting. The palate is rich, ripe and dense with a very fine texture, lashings of dark cherry fruit, plenty of fine-grained oak and appropriate tannin for 10-20 years cellaring.

2006 Pommard 1er Cru ‘Pézerolles’
Very fine and mineral with notes of violet and cherry, the palate is super fine and feminine with a lovely crescendo to the fine tannin / acid finish.

2006 Pommard 1er Cru ‘Clos de Derrière St-Jean’
From a tiny quarter of an acre plot which was planted in 1947 and is adjacent to the Domaine; this is beautifully perfumed with violets and red plum notes, the flavors on the palate are red cherry and finishes with a tight long structure – this has wonderfully buried ripe tannins. A superb wine which balances its flesh and density with its finesse and structure.

2006 Pommard 1er Cru ‘Les Rugiens’ *sold ou*
Planted 1947: oaky and dense, this is ripe dark and almost blackberry fruit, the palate is wonderfully concentrated with more blackberry fruit, the richness and harmony between the fruit, oak, tannin and acidity is superb and will guarantee a long life. Drink 2012 – 2040.
