Chablis producers since 1815, the organically cultivated Billaud-Simon vineyards deliver exceptional mineral-laden wines whilst respecting nature, terroir and tradition. They have also embraced technology in order to consistently turn-out suave, elegant, flavoursome and harmonious Chablis.

Vincent Dauvissat
Chablis, Chablis

This is probably the finest address in Chablis. Vincent Dauvissat uses oak sparingly to add complexity and dimension to his piercingly mineral concentrated wines. They are wines that are rarely exotic in their youth, but with age (and they age by the decade) they evolve and develop into exciting and comprehensive wines of the greatest class and interest.
